Shahi Paneer, a regal Indian dish, combines the richness of paneer (Indian cottage cheese) with a luxurious, creamy gravy. To prepare, sauté onions, garlic, and ginger until golden, then add tomatoes and spices like turmeric, coriander, and garam masala. Simmer until the flavors meld, then blend into a velvety sauce. Add cubed paneer and cream, letting it gently simmer until the paneer absorbs the flavors. Garnish with fresh coriander and serve with naan or rice for a truly royal feast.

Ingredients

  • 200 grams paneer, cut into cubes
  • 1 tablespoon ghee or oil
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 1 teaspoon ginger-garlic paste
  • 2 tomatoes, pureed
  • 1/4 cup cashew nuts, soaked in warm water
  • 1/4 cup cream
  • 1 tablespoon Shahi Paneer Masala (e.g., Pratham Spices Shahi Paneer Masala)
  • Salt to taste
  • Fresh coriander leaves for garnishing

Instructions

  • Heat ghee or oil in a pan and add cumin seeds. Let them splutter.
  • Add the chopped onion and sauté until golden brown.
  • Add ginger-garlic paste and cook for a minute.
  • Add the tomato puree and cook until the oil separates.
  • In a blender, grind the soaked cashew nuts into a smooth paste.
  • Add the cashew paste to the pan and mix well.
  • Add Shahi Paneer Masala and salt. Mix well and cook for a few minutes.
  • Add cream and mix well. Cook for another minute.
  • Add paneer cubes and gently mix them with the gravy.
  • Cover the pan and let it simmer for 5-7 minutes, allowing 11. the flavors to blend together.
  • Garnish with fresh coriander leaves.
  • Serve hot with naan, roti, or rice.
